Happy Meat Free Monday lazy green people!
Apologies that this weeks recipe is so late, I wanted to cook it for my own dinner tonight and test out just how easy it was! At first sight it might seem a bit of a faff – as there is quite a bit of prep – but once you get that bit done, these delicious parcels take only 10 minutes to cook! (Plus you’ll likely have left over cashew cheese and dough left for an even lazier dinner next time!)
So without further ado…here is my seasonal Pumpkin and Spicy Cashew Cheese Calzone recipe; a perfect warming treat after an evening of carving Halloween lanterns!! Continue reading Lazy(ish) Vegan Recipe: Pumpkin and Spicy Cashew Cheese Calzone
Happy Monday lazy green people!
Cornwall this weekend has been drizzly, chilly and grey; not the best weather for a county which prides itself on the great outdoors! As such, I needed a little taste of the exotic to trick me into thinking I was somewhere warm and far away.
Well this spicy aubergine tagine recipe did just that. Not only is it my go to recipe in the winter months for a comforting treat; it’s a fabulous dish to throw together and stick in the oven when you have more important things to do (like have rainy movie days…).

Though we are technically at the height of summer, and it’s the time of year for salads and ice lollies; we have a freak thunderstorm here in Cornwall today, and I am feeling ill. What started as a stuffy nose earlier in the week has evolved into a throat which feels like its on fire every time I swallow or talk. So for now I’m not planning to do either!!
But I will have to eat at some point, and when I do I want it to be the most ultimate comfort food I can think of…that isn’t boring old soup. So I thought today, for Meat Free Monday, I would share my old favourite Mexican Vegetable Stew recipe; which is soothing on the throat but has a bit of a chilli kick to help with coldy noses! Well, happy Meat free Monday lazy green people!!
This weekend has been a bit of a crazy one and I have to admit that I’ve really not done much in the way of advancing my “going green” journey. But it was filled with surfing, running, yoga and coastal walks; so at least I wasn’t my usual lazy self!
Speaking of which, I thought I would share another one of my magic recipes; which is easy, quick (vegan of course) and once made, makes up several meals in advance. Continue reading Lazy Recipe: Vegan Mushroom and Lentil Burgers
“When the moon hits your eye, Like a big pizza pie, that’s amore. When the world seems to shine, Like you’ve had too much wine, that’s amore!”
