Bees are synonymous with the perfect English summer’s day. Any portrait of rural Britain would be incomplete without our plump and furry little friends, but what many don’t know is that these small little insects that works so tirelessly and quietly around us, have played a vital role in the development of the human race.
Without them it’s unlikely that flowers would have evolved their diverse and alluring colouration, and they’re responsible for pollinating a staggering 70% of the food we eat in Britain. Their existence has helped feed both our soul and stomach, and without them agriculture as we know it would collapse.

Summer is slowly but surely coming to a close and, here in Cornwall, I’ve noticed an influx of last minute beach goers desperate to enjoy the last few weeks of the summer sun.
Even woodland fairies like me – who prefer a welly-booted walk through an enchanted forest – like the occasional day at the beach to soak up some sun, sea and sand. But before running toward the coast with our beach bags full to the brim, here’s my five essentials for a lazy green beach bag:
Beetroot. Some say it’s a little like Marmite, you either love it or you hate it. To some, its too earthy, tangy or just a pain in the bum to clean up. To others, a salad or roasted veg dish just isn’t the same without it! I personally love the stuff roasted with sweet potato and tossed into some cous cous, or with an oriental twist in my Thai Spiced Beetroot and Cashew Soup. A while ago Trudi wrote a piece about eating seasonably and all the benefits of it. When I was in England, I tried my best to eat seasonably, as being a lazy girl it was an easy way to be green with fairly minimal effort and you get the food at its best. Everyone’s a winner.
This is something I have tried to continue whilst in Australia. However it’s been slightly more challenging this side of the world for a few different reasons. One of those being that the seasons are reversed here, meaning I have to switch June around in my brain from Summer to Winter, and all the foods I associate with winter which to me is pumpkins, root vegetables, yummy soups and Christmas dinner (Veggie style). It’s been a pretty crazy few weeks for me, with one huge event to organise at work, plus the worlds most disorganised house move ever! But I’ve settled in to my brand new little home with more resolutions that the last 5 New Years rolled in to one! Aside from doing daily yoga and meditation, and eating less junk food, I’m also going to be ditching the car and walking the 40 minutes to work everyday day. Watch this space..
Happy Friday! I hope you aren’t all too chilly and full of the January blues?! It’s certainly has been a corker of a winter here in Cornwall and I’m pretty much ready to step into spring now. Though I have noticed – whether coincidence or not – that my first vegan winter I have largely escaped any colds or virus’; the darkness and constant cold chill is starting to wear me down a little. I’m dreaming of fresh spring salads and cold white wine in the warm sun, with no log burner or intensive moisture in sight!
But as my weekly veg box is proving, we are still in the winter season or root veg and warming dishes. So this week I thought I would share my latest favourite comfort food; creamy, garlicky, herby courgettes and barley. It’s sooo easy to make and is really satisfying on a cold wintery day. Courgettes are still going strong as a seasonal star and cooking them like this is a great way to pack them into a dish and make the most of their delicious taste. OK, I’m only going to admit this to you just this once, so soak it up while you can. I didn’t exactly follow any of my own advice when it came to succumbing to Christmas confectionary. In fact, not only did I not “step away from those special edition boxes of chocolates” as I advised last month; I continue to purchase said naughtiness to this day. I know I know, I’ve put shame on the whole sustainable community and I deserve every inch of the added layer nestled around my waist!
But as per tradition, January is a time of getting fit, getting healthy, and generally getting off our butts after a month of eating, drinking and being far too merry! I’m sure I’m not the only one making health food shopping lists, avoiding alcohol and setting a 6am alarm for that early morning run (which predictably gets put off for “one more day“). Hello my lovely lazy green people, I hope you all had lovely Christmas breaks and not feeling too full and lethargic! My break has been so relaxed that I completely switched off from my every day life. Now I’m slowly trying to get back into the swing of things and beginning to think about how I can get next year off to a positive start.
It’s been 8 months now since I decided to change some of my lazy, or procrastinating, habits into green actions. There have been many things I’ve found relatively easy to do – such as switching to organic food and buying less “stuff” – and some things I have gradually learnt to do over time; like going plastic free, and cutting out ingredients like palm oil.
