Lazy Vegan Recipe: Naturally Sweetened Cashew and Arrowroot Cookies

I realised the other day that it’s been a long time since I shared one of my lazy vegan recipes, and hoped you all didn’t think I hadn’t been eating much since I shared my herby, “creamy” garlic courgettes and barley recipe in January. Believe me, I have been eating plenty!

But at the weekend, when I had a case of late night sweet tooth munchies, I concocted a recipe to use up whatever I could find it the cupboards; and it was surprisingly a massive success! In particular, I wanted to make a dent in a jar of arrowroot I bought when trying out Green Moxie’s Natural organic eye shadow recipe. It’s pretty awesome that one ingredient can make you pretty and give you a happy belly!

The best thing about these cookies is that it’s all naturally sweetened thanks to the agave syrup, so they are almost guilt free. You can also swap the nuts for your favs; I just love cashews.

Green Activity Ideas for Earth Hour

Tonight I’m really looking forward to my first WWF Earth Hour experience. This year, the global annual event will see hundreds of millions of people switch off their lights, for one hour, to demonstrate their love of our wonderful planet. I love the idea that for just a short amount of time, millions across the globe are partaking in something so simple but symbolic; in a bid to raise awareness for environmental and conservation issues.

So between 8.30 and 9.30pm, I’ll be switching off all my lights, TV and music; and showing my love to the Earth!

Tiny Green Living

Earlier this month I made a step to downsize my outgoings, and belongings, by moving into a small but cosy studio apartment. I spent hours in the lead up to the move sorting through my stuff; posting onto Streetbank, donating to charity shops and recycling where they had completely given up the goat. It was surprisingly cleansing to get rid of so much, even the things I had kept onto for over 10 years. But surprise, surprise, when I moved into my new studio flat – which is literally a room with a bathroom attached – I realised that my many attempts of de-cluttering was simply not enough. Hello my lovely lazies, how are you?!

It’s been a pretty crazy few weeks for me, with one huge event to organise at work, plus the worlds most disorganised house move ever! But I’ve settled in to my brand new little home with more resolutions that the last 5 New Years rolled in to one! Aside from doing daily yoga and meditation, and eating less junk food, I’m also going to be ditching the car and walking the 40 minutes to work everyday day. Watch this space..

5 Things I Miss as a Vegan

Aside from the obvious – and completely uninformed – questions concerning where I get my protein from, or how I could possibly live without cheese, one question always pops up when I tell someone I’m vegan; what do I miss the most? I find this a really odd thing to ask. It assumes that by cutting out animal products from my life I have in turn backed myself into a limited resource corner; in which I am deprived of what are clearly the most desirable things in life. Oh poor vegan me, people must think. No chocolate, ice cream, lamb chops, macaroni cheese, leather belts, “luxury” cosmetics etc etc. Surely I would miss all those things as they are so engrained in our culture, our history and more importantly, our habits. Your Green Life: Zero Waste Chef

Ok, so first things first: a massive apology for how embarrassingly late this interview has come to you lovely people. About 3 months to be exact! But they say you leave the best to last, and I have to say this is a gem of a green life right here! 

Fellow blogger and my ultimate cooking inspiration, Zero Waste Chef, makes living waste free and cooking from scratch seem easier than finishing off a cool glass of white wine on a hot summers day! From buying fresh, local and seasonal; to using up every last morsel of food. Being the lazy old fool I am, I tend to watch with amazement but rarely give her recipes a go; though her ideas and food knowledge never cease to amaze me. 

Alongside her blog, Anne-Marie also hosts regular webinars and workshops to help others learn the skills of waste free cooking where she lives in California (dream home BTW!). In fact, as I will be finishing off my backpacking travels in San Francisco next year; I’m very much hoping I can catch one of these and learn a thing or two myself!

Waste Free Dining With Doggy Bags!

Doggy bags are the best. That is, if you’re brave enough to ask for them! We are all guilty of having eyes bigger than our bellies from time to time, and ordering way more than we can possibly consume when eating out. But when it comes to sending plates of food back to the kitchen, the dreadful waste can be a little too much to stomach. But I for one am always a little shy just to ask for a doggy bag. If eating at a restaurant that also offers a takeaway service it can feel a little less cheeky asking for a tub to take any leftovers home. But even then the food often sits in our fridge for a few days before being thrown into our bins at home!

This weekend we were faced with this dilemma when we went out for Sunday Lunch at the Offshore Bar and Bisto in Cubert. A couple of sides of steamed seasonal veg were ordered, but with such generous main portions, they were barely touched. After forcing a carrot or a sprout into our mouths, we all admitted defeat. It felt like a complete waste to send it back to the kitchen, but we all seemed unsure if it was good etiquette to ask for a doggy bag.
