Well, happy Meat free Monday lazy green people!!
This weekend has been a bit of a crazy one and I have to admit that I’ve really not done much in the way of advancing my “going green” journey. But it was filled with surfing, running, yoga and coastal walks; so at least I wasn’t my usual lazy self!
Speaking of which, I thought I would share another one of my magic recipes; which is easy, quick (vegan of course) and once made, makes up several meals in advance. Continue reading Lazy Recipe: Vegan Mushroom and Lentil Burgers
“When the moon hits your eye, Like a big pizza pie, that’s amore. When the world seems to shine, Like you’ve had too much wine, that’s amore!”

Happy meat free Monday lazy green people!
As Monday always feels like the longest day of the week, and when you get home you aren’t always in the mood to cook, I thought I would share a favourite easy vegan recipe of mine. And the best thing is, this recipe serves about 4 people; so if there are less of you, you have a whole other meal ready for you to have another day!

Not usually one for following recipes; I never really have the patience to follow something step-by-step, and usually end up free-styling and making it up. But…last week my friend told me she had made her own granola, and it actually sounded very easy to do. In fact, what I love is the fact you really don’t need to follow any strict ingredient list, and can add anything you have lying around in the cupboard. You literally just chuck in what you fancy!
