A chef, I am not. But I really do love my desserts! And though I’ve been sharing some of my lazy vegan recipes over throughout the year, it’s more to share what I’ve been stuffing my face with, than any motivation to start my own bestselling cook book. And to be honest, when there are so many stunning vegan bloggers out there, why should I even need to bother?!!

Lazy Vegan Recipe: Thai spiced Beetroot and Cashew Soup

It’s early December and the weather is chilly…it can only mean one thing; we’re in the deepest depths of beetroot season! My last three weekly veg boxes have been piled with this crimson root veg and there is only so many beetroot, apple and lemon juices you can make when all you want is a big bowl of chips! 

But as Beetroot is such a fantastic source of betacarotene and folic acid – which is known to help cleanse the liver and assist in lowering chances of heart disease I thought it as high time I created a beetroot dish that would have me coming back for seconds!

This soup is soooo warming and moreish and actually makes an amazing base for a curry if made with less water. Try it with a big chunk of walnut bread and you will be in beetroot bliss!!

Lazy Vegan Recipe: Chestnut and Chia Seed Nut Roast

There is a tradition in my house that we always have a roast dinner every Sunday. This tradition, I have to admit, stems from my unnatural love for roast potatoes; in which a Sunday roast is my chance to overindulge in carb heaven.

I have been trying, and mostly failing, to follow my nans amazing nut roast recipe; which is always a hit even with the meat eaters in my family. That was until yesterday, when I cracked jackpot with this chestnut and chia seed recipe. It was a really lovely “meaty2 consistency, and the chunks of cashews made my mouth water.

And whats more, it can even be made in batches and frozen, ready for a lazy dinner another day!! I have kept the quantities fairly loose as I tend to use up whatever bread I have, and work the ingredients around that.

Lazy Vegan Recipe: Salty Peanut and Chocolate Bites

Happy Meat Free Monday!!

The last couple of weeks I have been trying to get into a proper running routine (not the best time of year to be motivated!) but have been craving a little sweet treat to err…keep my energy up?!! I have seen a few chocolate peanut butter recipes recently and I wanted to give it a go.

What makes this recipe so simple is it only needs 6 ingredients for a truly decadent treat:  coconut oil, coco powder, agave (or maple) syrup, ground almonds, peanut butter and salt.

Lazy Vegan Recipe: Fennel, Garlic and Chilli Dal with Chapatti

The best thing about the weather getting cooler is I have an excuse to munch on warming, filling comfort food! From soups, chillis and stews, to apple pie and hot chocolate. But when you are looking for something a bit quicker to prepare, which doesn’t need lots of ingredients, you really can’t beat a warm and spicy dal.

The best thing about Dal is you don’t need to be much of a whizz in the kitchen to get a great meal; and over time you can experiment with flavors and consistencies to get your ultimate recipe! Lazy Vegan Recipe: Coconut and Almond Zombie Halloween Ghouls

It’s Halloween week!! I’m extra excited this year, as October 31st will also be the day my dearest and closest cousin gets married. It’s because of this upcoming event (along with it’s Medieval Halloween themed dress code) that I have been a bit behind with posting any festive blogs.

But last night I got a burst of Halloween excitement and realised my Meat Free Monday recipe couldn’t miss out on a bit of trick or treat naughtiness. As always, I left it until late in the evening to do, and made it up on he spot with whatever I had to hand; so it’s testament to a quick and easy lazy recipe 🙂 I’m guessing it’s pretty easy to freestyle too, depending on what ingredients, and time, you have to spare.

Lazy(ish) Vegan Recipe: Pumpkin and Spicy Cashew Cheese Calzone

Happy Meat Free Monday lazy green people!

Apologies that this weeks recipe is so late, I wanted to cook it for my own dinner tonight and test out just how easy it was! At first sight it might seem a bit of a faff – as there is quite a bit of prep – but once you get that bit done, these delicious parcels take only 10 minutes to cook! (Plus you’ll likely have left over cashew cheese and dough left for an even lazier dinner next time!)
